This privately-owned iconic tourist attraction is located in the Blue Mountains, offering a theatre with 75 seats; a gift shop; a restaurant open for lunch and providing themed buffets for groups for up to 300; an outdoor bistro with 120 seats; a small cafe and a kiosk. You will successfully manage all restaurant, functions and kitchen operations and optimise the retail return of the Café & Kiosk. This includes the development and management of the Restaurant Experience Product. You will be responsible for leading the teams of kitchen and restaurant, with first level contact the head chef and team leaders. You will increase the number of events for this client, be targeting private or corporate events; achieve the business strategic plan; maximize the revenue, control of costs within budget and profitable financial return, through optimised ordering of supplies & staffing levels; approve all menus and products for sale in all 3 food outlets. You will be an experienced food and beverage manager with preferably some experience with large tourist groups, might have been working in cruise ships or any major tourist attractions in Australia.
